There is a magic quality of light in Provence exuding from a warm
sun that enriches the color of the vegetation and softens the texture
of the stones. It shines through the dry air which filters out oppressive
heat, and makes the days long and golden. These days begin with
coffee and croissants on the pavements of lazy villages, or on vine-covered
terraces in country homes. Food is important in Provence. Everyone
is particular about what they eat and what they buy. The markets
sparkle with juicy fruits and plump vegetables, and the country
kitchens, with stone floors, generous tables and bubbling dishes,
are the envy of cooks from all over the world. In the pot, too,
go the herbs from the hills, the rosemary and thyme which scent
the countryside. There is honey from the bees, drunk on the pollen
of lavender which perfumes the slopes. For the walker clambering
on Mount Ventoux, the Dentailles or the Lubéron, these make
a heady aroma which needs to be deeply inhaled. The timeless quality
of the landscape is enhanced by some of the finest Roman remains
in the world, too grand in their day to have crumbled much in 2,000
years. There is a medieval feel, too, from the remote perched villages
to the grandeur of the popes' Avignon, and a fine dignity in the
lively university town of Aix, fief of Provence's Good King René.
